This washed processed coffee from Hambela Dabaye packs impressive sweetness, with delicate floral notes characteristic from the Guji region. Brewed coffee reveals raw sugar sweetness, with citrus fruit notes of pink grapefruit and tangerine.
I recommend roasting this coffee on the lighter side. Light roasts really bring out the bright citrus and floral notes, which are what make these coffees so special. Medium roasts still taste great with tons of bright citrus shining through the deeper caramel flavors. Try this coffee black as a pour over or aero press for the full experience.
Fully washed, dried on raised beds, grown at 1800-2000 meters.

Wet-process or washed Ethiopian coffees can possess sparkling-bright acidity, with citric fruited suggestions, while sweet spice and florals can dominate the aromatics.
Dry-process coffees are when the coffee cherry is picked and left directly on raised beds to dry. The dried fruit surrounding the seed (or bean) results in strong dried fruit flavors. Dried fruit notes from of all types from raisin to berry to mango to peach can be present. Dry processed coffees are also called naturals and can have thick body and an intensity of flavors overall that are unique.
